When you are recording MIDI in your DAW, when you're playing along and it seems like you're playing and instrument; those are just the messages that are being recorded. When you see those little squares, those are called midi blocks. The beginning of the block is the MIDI on message and the end of the bock is the MIDI off message and the third message is which MIDI note was played.
There is a lot of messages that you can send with MIDI, so you can really control Instruments in a lot of different ways. And also in you DAW, there isa pencil tool so you can write them and there are graphs so you can draw them.
